Classic pumpkin pies use a mix of cinnamon, ginger, nutmeg, and allspice. Spices are paramount to bringing out the flavor of pumpkins.

Most pumpkin pie recipes tell you exactly how much of each spice to use. Other recipes call for pre-mixed “Pumpkin Pie Spice” which is a combination of all the spices required for a pie. 

Should you buy pre-mixed “Pumpkin Pie Spice”? Should you even consider recipes that call for it? If you’re an amateur, it may be economical and easy. If you’re a more advanced chef, “Pumpkin Pie Spice” could limit your flexibility in the kitchen and just cost you more in the long run. And finally, for those of you who are sophisticated in the kitchen, the very concept of pre-mixed spice will be downright insulting and out of the question!
